Our Sake

Ryusei

Kimoto sake, shaped by the microorganisms living in the kura.

Ryusei dates back to the founding of Fujii Shuzo in 1863. Its name comes from the mountain behind the kura, known as “Dragon’s Head.” The sake brewed with its spring water was so fine that it was named for the dragon: Ryusei.

Ryusei has five series. They represent different approaches, rather than a hierarchy of quality: different ways of responding to the character of the rice fields and the kura each year, and giving it expression in sake.

Some sake reflects the character of the rice fields as directly as possible. Some gives clear form to the changing character of the kura. Some balances those variations to accompany everyday life. Some forms the lasting foundation of our range. And some explores a question through brewing.

From one kura, many expressions of sake.
