Refined.
Of our four varieties, this sake possesses the most stable structure.
Polished to 50%, the reserved nature of the Hattan-nishiki rice is refined into a balanced, seamless undiluted sake.
It makes no flashy statement.
Yet, it is perfectly formed and holds its shape.
This stability is the very essence of its quality.
The cereal-like umami is neatly arranged, lacking nothing and holding nothing in excess.
It evolves gently with temperature, maintaining its structural integrity at any level.
While it uses the same Hattan-nishiki rice as our "Nagomi no Karakuchi" Limited Series, the rice polishing ratio, mash design, and lack of water dilution set it apart.
This is not a sake for casual daily consumption, but a distinct line drawn to sharpen the senses.

About the Special Selection
The Special Selection series is crafted to sharpen the human senses to their absolute limit. Using the same varieties as our Limited Series, we polish the rice to 40% and bottle the sake as undiluted (genshu), without adding any water.
Produced entirely using the Kimoto method in a completely closed-system environment. Fermentation relies solely on the microorganisms indigenous to our brewery, with no cultured yeast or brewing-grade lactic acid added.
