A soft breath of white, and gentle bubbles.
A sake still alive in the bottle.
A raw, undiluted nigori (cloudy) sake that continues to gently effervesce.
Brewed using Hattan No. 35 rice polished with the genkei-seimai (original-form polishing) method, and crafted solely by the microorganisms residing in our brewery.
Its light, smooth mouthfeel—which avoids the heaviness often associated with nigori sake—is a result of this specific rice variety and polishing technique.
A nigori sake with a dry profile.
Features the soft sweetness of rice and a silky, smooth mouthfeel.
The gentle bubbles dissolve on the tongue, creating a sense of comfort that grows with every sip.
A pleasant acidity tightens the flavor profile in the latter half, leading to a light finish.
Its structure is most distinct when served chilled.

About Our Brewing
At Fujii Shuzo, all of our sake is brewed using the Kimoto method in a completely closed-system environment.
We do not use cultured yeast or added lactic acid; fermentation relies solely on the microorganisms that have made their home in our brewery.
We do not disclose numerical values such as the Sake Meter Value (SMV) or acidity.
We believe it is more important to experience the sake yourself through tasting than through numbers.
