The abyss.
Of the four varieties, this is the most unfathomable sake.
We have polished the power and wild character of the Omachi rice down to 40%,
finishing it as a raw, undiluted sake with a complexity that defies simplification.
It is not easy to grasp.
Yet, within its depths,
there is a place no other variety can reach.
With a low center of gravity, layers of complex umami stack upon one another.
This sake truly comes into its own when served warm.
As the temperature rises, the umami emerges from the very depths of the abyss.
While it uses the same Omachi rice as the Limited Series "Muku no Keifu,"
the rice polishing ratio, mash design, and lack of water dilution set it apart.
It is the strength of Muku no Keifu refined to an even deeper dimension.
Its character changes significantly with aging.
Among the four varieties, this sake exhibits the widest range of transformation over time.

About the "Bekkaku-hin" (Special Grade) Series
The Bekkaku-hin series consists of sake crafted through the sharpening of human intuition to its absolute limit. While using the same rice varieties as our Limited Series, we polish the rice to 40% and bottle the sake as undiluted "genshu" without any added water.
Entirely Kimoto-brewed and fully self-contained. The fermentation process relies solely on the microorganisms resident within our brewery, without the use of cultured yeast or lactic acid additives.
