From this place,a sake of its own.
Receive what the land and brewery offer. Bring all our care and craft to it.
This is why we brew Ryusei the way we do, here in Takehara, Hiroshima.
Trust the character
that begins here.
The climate and water. The brewery building and its tools. The microorganisms living among them. Their relationships create the conditions in which fermentation takes shape.
We are searching for the character of a sake that grows with this place. To explore that possibility, we put the brewery’s environment at the heart of our work.
Do the work
that lets us receive.
Fermentation can bring us something that human design alone cannot create. Our role is to recognise that activity and prepare the conditions for a healthy beginning.
We observe what happens in the brewery and question our own decisions. When we say “Shubo, received,” we mean respecting microbial life and taking responsibility for the environment in which the fermentation starter develops.
Take responsibility
for a beautiful glass.
“Moromi, nurtured” is the other half of our belief. Once the starter becomes the main mash, we bring our skill and senses to the fermentation, shaping it into a sake people will enjoy.
Each year and each batch asks something different of us. We work with those differences, seeking to bring layers of acidity and umami into an elegant drinking experience. The responsibility for that final glass is ours.
Carry this work
into the future.
From one fermentation to the next. From our generation to those that follow. What we hope to pass on is both the place that gives rise to sake and a way of paying attention to its life.
That means treating our methods as work in progress: trying, checking and changing. As the brewery evolves, so do we.
What begins here
should bring you joy.
We care for this land and brewery because, beyond them, there is someone who will drink our sake.
We hope to make a sake that opens up alongside a meal and enriches time spent with others. That is why we return to the work of brewing, here, each day.
