As some of you may know from social media or the media, Fujii Sake Brewery has participated in a joint brewing project under the slogan "#Don'tStopNotoSake! " to support sake breweries affected by the 2024 Noto Peninsula Earthquake that occurred on January 1st.

Fujii Sake Brewery is brewing in collaboration with Hiyoshi Sake Brewery in Wajima City, and will be selling a two-bottle set: "Noto Wajima Ore no Sake," which is made with an original recipe aimed at recreating the quality of the original sake under the supervision of Hiyoshi Sake Brewery, and "Ore no Sake x Emperor of the Night," a one-off collaboration sake that was jointly planned from the sake quality design stage.

≪Product details≫

1st bottle: Original recipe for Junmai sake "Ore no Sake" <br>This sake aims to faithfully reproduce the recipe for Hiyoshi Sake Brewery's Junmai sake "Ore no Sake."
We aimed to create a taste that was "my own sake" by using original ingredients as much as possible, including the rice, yeast, and koji mold.
2nd bottle: "My Sake x Emperor of the Night" collaboration sake . A sake jointly brewed by Hiyoshi Sake Brewery and Fujii Sake Brewery.
The raw rice is Hattan Nishiki rice from Hiroshima Prefecture, and the kimoto yeast starter, which is Fujii Sake Brewery's identity, is used.
This special limited edition sake uses Hiyoshi Brewery's "Ore no Sake" recipe for yeast, koji, and brewing ingredients. We aimed for a flavor that combines the mild and light flavor of Kyokai 1401 with the depth of kimoto.

720ml x 2 bottles set 4,400 yen (tax included)

We will inform you of the stores that will carry the product once sales begin.

About Hiyoshi Sake Brewery

Hiyoshi Sake Brewery's representative brands are "Kinpyo Shirakoma" and "Ore no Sake."
This sake brewery has deep roots in its local Wajima area, with most of the sake it produces being distributed within Wajima city. In addition to the extensive damage to its buildings and facilities caused by the recent earthquake, the entire city was also hit by fire. The brewery owners are currently living in temporary accommodation in Kanazawa city, traveling back and forth between Wajima and Kanazawa to carry out restoration work. It seems that the water and electricity in Wajima are still cut off.

Touched by their determination to move forward and work towards recovery despite the difficult circumstances, Fujii Sake Brewery has decided to cooperate with this joint brewing project.

Below is a message from Hiyoshi Satoshi, the fifth-generation head brewer and master brewer at Hiyoshi Sake Brewery.

My name is Hiyoshi Satoshi and I work at Hiyoshi Sake Brewery, which brews "Kinpyo Shirakoma" and "Ore no Sake" in Wajima City.

First of all, I would like to express my sincere gratitude to all of you who have supported and cooperated with this project.

Our store, located in a brewery on Wajima's Asaichi Street, escaped damage from the fire that broke out during the earthquake on January 1st. However, all of the earthen storehouses used for sake brewing and storage were destroyed, and we were in a dire situation where not only were we forced to give up on this season's brewing, but we also had almost no sake left to sell.

In the midst of all this, I received encouragement and support from many colleagues, acquaintances, and customers, and just as I began to think about things in a more positive way, I was approached about participating in this project.
At first I was hesitant to participate, but I still wanted to get involved in sake brewing, and I wanted to help with the reconstruction of Noto in any way I could, so I decided to participate.

I believe that rebuilding the sake brewery and revitalizing Noto will not be an easy road ahead, but I would like to express my gratitude once again for the connections and bonds of friendship that have been made through this project, and I would like to move forward one step at a time, so I would appreciate your continued support and cooperation.
