Fujii Sake Brewery will be featured in "Akita Biography" broadcast on AKT Akita Television!
This issue of "Akita Biographies" features Konno Hiroshi, the fourth-generation president of Akita Konno Shoten, a koji starter manufacturer.
We follow President Konno's passion for microorganisms.
The reason why we asked Fujii Sake Brewery to interview us was...
Our brewery uses a koji starter called "Maruhiro Moyashi."
Maruhiro Moyashi is a koji mold that was distributed by Konno Shoten (now Akita Konno Shoten Co., Ltd.) to Hiroshima sake breweries during the Taisho era, which were making great strides at the time, winning top prizes at sake tasting competitions on a regular basis.
It is no longer officially distributed, but we are using a specially reproduced version.
It is a very excellent variety of koji mold, and is said to be the ancestor of many of the koji molds currently in circulation.
This koji mold has a gentle, enveloping sweetness similar to that of wasanbon and is characterized by its high enzyme activity.
You can't see it in Hiroshima, but if you live in an area where you can, please check it out.
