Ryusei Katsu Nigori-zake 2025BY Brewery Release Starts

A lightly sparkling "Katsudakushu" (lively unfiltered sake) made through secondary fermentation in the bottle.
It features a fine sediment and a gentle effervescence.
The mouthfeel is smooth, with a dry profile.
A fragrance reminiscent of young peaches spreads with a refreshing acidity.
Subtle sweetness and bitterness layer together, leaving a short, light finish.
This year, by refining the sediment to be even finer,
we focused on how it appears when poured into a glass
and the lightness of its mouthfeel.
While the carbonation is slightly milder than in previous years,
we believe the balance with its sweetness has become more sophisticated.
Because the impression changes with temperature,
you can enjoy it paired with a variety of dishes.
